Beating Heart

This is something I read about and had to see. These fish have been dressed in such a way that the hearts, located in the side with the white bladders, are still beating thus circulating blood and keeping the meat fresh. The folks in Hong Kong are fanatics about their food and it being fresh.

I would guess the recent scandals about tainted food products from China bother them as much as they do us.
