Cheese Room

An Oneida cheese vat, shipped from Almira, New York, to Pipe Spring soon after the fort was completed in 1872, was used in the manufacturing of cheese. One hundred gallons of milk would produce a 60 pound wheel of cheese.

A nice documentary shot to accompany the information. Interesting that it took 800 pounds of milk to make 60 pounds of cheese. The cheese must have been VERY good back then. :-)
